Photographer's Note
Un des plats très appréciés par les marocains que l’on déguste, par exemple sur la place Jamâa el Fna à Marrakech, lorsque les petits restos installent leurs tréteaux et remplacent conteurs, écrivains publics ou charmeurs de serpents …
Ingrédients
• 4 Kg d'escargots
• 1 cuiller à soupe de grains d'anis vert
• 3 c.s de carvis
• 4 c.s de thym
• 1 c.c de thé vert
• 2 morceaux de racine de réglisse
• 4 branches de menthe séchée
• 3 grains de gomme arabique
• l'écorce d'une orange amère
• l'écorce d'une orange douce
• 2 branches d'absinthe
• 5 feuilles de laurier
• 1 c.s de piment doux
• 4 piments forts non pilés
Préparation
•La veille lavez plusieurs fois à grande eau les escargots puis placez les dans une grande bassine. Saupoudrez de farine et laissez les dégorger.
• Le lendemain relavez les à grande eau.
• Versez dans une grande marmite 6 l d'eau et portez à ébullition. Enfermez toutes les aromates et épices, à l'exception des piments (doux et fort) dans une mousseline et placez dans la marmite.
• A la première ébullition, jetez y les escargots et laissez cuire 1h à 1h 30 selon la taille des escargots.
• Rectifiez l'assaisonnement et servez dans des bols avec leur bouillon.
Snails are appreciated by Moroccans, for instance on Jamaâ el Fna square in Marrakech, when after sunset story tellers, peddlers and snake charmers leave the place to many food-stalls

• 4 s.s of thyme
• 1 coffee spoon of green tea
• 2 pieces of liquorice roots
• 4 branches of dry mint
• 3 grains of arabic gum
• 1 peel of sweet orange
• 1 peel of bitter orange
• 2 branches of wormwood
• 5 leafes of laurel
• 1 s.s of mild pepper
• 4 strong peppers not ground
Preparation
• wash the snails the day before several times with large amounts of water, then let them in a large pan. Sprinkle with flour and let them release water
• the next day wash them again with large amounts of water
• Boil water (6L) in a large pan and then add all spices and aromatics
• At the first boiling bubbles pour the snails and cook for 1h-1h30, according to the size of snails
• Serve in bowls with the bouillon

Encore une belle compo pour découvrir ce "petit métier". Je ne savais pas qu'il yavait autant d'escargots au Maroc et qu'il s'en consommait autant; pas vu ça en Tunisie.

Hi Patrick,
Very natural daily life scene. Great expressions on the face. Very good POV. The hand made bags where the snails are kept looks very beautiful. Nice to see your menu. Snails are eaten in my Village. I have never seen else where in as many cities I have visited. Thanks for reminding me of those days when I used to have it with my Grandfather and an extended family with almost 15-20 members.

I didn't know that they ate snails in Morocco! Forgive me if I don't use the recipe. We can't get the good snails here.
Your photo is a very good daily life shot and a kind of portrait of the snail seller - he looks philosophical about his life and work. And the viewpoint is a good one, with the eye being led into the store-room behind him. He must have been shaking his hand fast to make it blur at 1/60. Anyway, it's an interesting photo.
I like the way the snails are trying to escape!

nice colours, good piece of documentary, thats a whole lot of info, snails..something that i am yet to try, south east asia they have it raw. they even have snakes, other reptiles, lizards, baby octopus, worms etc..
you are a traveler, you should have tried all that once :)

thanks for this image, it brings back so many memories of my childhood!
I love escargots and this is a very familiar sight for me - my father was a great "snail collector" (especially of this striped kind), going at night after a rainfall to "secret places" and coming home with 20-30 kg of them... then the cleaning would start, in baskets like these, where the snails were left for three days, covered, with lettuce leaves... me and my brother would always take a few to play at "snail racing" on the balcony. I grew up eating lots of them, cooked more or less in the way you describe in your note...
but having said that - I like very much the simplicity of the shot, with the snails framing the seller. the big baskets in the foreground with the snails trying to escape are just so real!

Hi Patrick,
I remember seeing these snails being sold at the night market by the bowl full. I like your wide angle here to get in the man, his little shop and his baskets full of snails. Also nice that you got a little blur of movement with his hand.
Cool that you have given us the recipe for this popular Moroccan dish :-)
