Photographer's Note

Mendoza is world renowned for its wine production, but it also stands out for producing quality olives and olive oil. Founded in 1906 by French immigrant Don Francisco Laur, the olive farm that bears his name is a pioneer in olive growing in the region.

The main photo shows the building where the ancient factory used to be, now turned into a museum. To the right, some olive trees. In the first workshop, some olive oils and balsamic creams that we could taste during the visit; in the second, a special release, an extra virgin olive oil, produced from extremely unripe harvested Arauco olives with a 5% output, and a 0,1% acidity.
